Vegetable Spring Rolls

Happy Chinese New Year! To celebrate the Year of the Pig, I am serving up lots of delicious Chinese dishes this evening and throughout the week. But on the first day of the new year, I decided to share my most crowd-pleasing Chinese recipe: Vegetable Spring Rolls! These Vegetable Spring Rolls are a crowd-pleaser for many reasons. They are warm, crispy and full of delightful vegetables and noodles. Plus, they can be enjoyed by everyone—vegetarians included! For the filling, I combine shredded carrots, cabbage, woodear mushrooms, scallions, rice noodles, and a few key Chinese sauces and oils. Then, I wrap the filling in store-bought spring roll wraps before they are plunged into a pot of oil and are deep fried until crispy. I have another recipe for Baked Spring Rolls that works great too, but I like to deep-fry these when celebrating as special as Chinese New Year. The Ultimate Veggie Nachos

Superbowl LII is just a few days away and it’s time to start thinking of some tasty snacks to serve on the big day. Chicken wings, pretzels, meat (in any form), and dips all make an annual appearance at the big game, but the Superbowl won’t be complete without nachos! Nachos are the ultimate Superbowl snack food. They are salty, savoury, cheesy, spicy, fresh, and hearty…and just about everyone loves them. There is little to no fuss for the host as well, just layer up the nachos, cook them in the oven and serve them to your guests right off the tray! It really couldn’t get any easier than that! Of course, there is a bit of a science to making the “ultimate” nachos- and that science involves layering. We are 25 days into the new year and I have finally found the time to get back into blogging. While it appeared like I was on a mini vacation, this past month has been a whirlwind and I have been extremely busy- with an exciting event and a not-so-exciting event. First, the exciting event. To start off the new year I did something crazy… I moved to Victoria, BC! I have to get my About Me page updated now 😛 Talk about new year, new me! I just got a new job based in Victoria so we packed up and move out to The Island. Surprisingly, the move went incredibly smooth considering that we had to travel from the mainland to Vancouver Island- only about 70 kilometres- but we (and all my stuff) had to take a ferry to get there. Gluten-Free Jam Thumbprint Cookies

We can’t get through the holiday season without some sort of jam cookie. Jam cookies are so classic and so retro, and I think that everyone’s parents or grandparents have made them some similar style cookie before. This year, I have taken a different approach to making these jam cookies by making them gluten-free! While I am not gluten-free, I definitely appreciate these Gluten-Free Jam Thumbprint Cookies around the holidays since these cookies are a bit lighter and won’t make you too bloated after a meal…unless you eat the whole tray 😛 In this recipe I simply substitute all purpose flour for almond flour, which is simply made of finely ground almonds. The almond flour gives the cookies a slight almond flavour itself, but I amp up the flavour with a bit of almond extract. The almond flavour in combination with the raspberry and apricot jam are such great flavour combinations that everyone is sure to love! Soup Series: Wonton Soup

Hey there everyone! I am back again with another fantastic soup recipe for my #SoupSeries. I would say that this recipe for Wonton Soup is my quickest and easiest recipe in the series, but only if you do a bit of prep work in advance. Once you have the wontons all made (which is a tedious but highly rewarding task), this soup takes 15 minutes or less to cook from start to finish! How’s that for a quick and easy meal?! As I mentioned above, the wonton-making process can be a bit tedious but trust me, it is DEFINITELY worth it. I take a quick short-cut by using store-bought wonton wrappers, just for convenience, but other than that, everything else that is going into them is homemade. I really like making my own fillings because you know exactly what ingredients are going into the wontons and you know how fresh they are- something that you don’t always know when buying them from the grocery store.
