Lemon & Herb Salmon Burgers

As you may have recently seen on my Instagram, I have collaborated with my good friend Liisa (@Essential_oil_health) to give away a few of my favourite essential oils. Not only are essential oils great for diffusing into the air and making your home smell amazing, you can actually use them in cooking (in small amounts of course)! This month, we are giving away a bottles of essential oil from DoTERRA: Lemon and Lime. We thought that these oils would be perfect for spring since they are so uplifting and refreshing, and can be used in tons of recipes, like this one for Lemon & Herb Salmon Burgers! There is not a can of salmon in sight with this recipe—it is made with fresh salmon fillet. I really prefer fresh salmon as opposed to canned salmon since it’s often less pungent and less cat food-y…if you know what I mean. Gluten-Free Almond Thumbprint Cookies

I didn’t forget about my Gluten-Free friends during the #12DaysOfChristmas! I have made this delicious and not-too-sweet cookie recipe using almond flour and whole almonds. These Gluten-Free Almond Thumbprint Cookies are inspired by may grandma’s almond cookie that she makes every Christmas. While hers are made with ground almonds, marzipan and flour, I am keeping my recipe 100% gluten-free. These cookies are much lighter but pack a ton of almond flavour just like my grandma’s recipe. In this recipe, I use ground almond flour, almond extract and whole almonds to give these cookies lots of flavour and texture. The ground almond flour makes the cookie crumble nicely and have a bit of a bite while the almond extract adds a deep almond flavour. The whole almond on top of the cookie adds lots of crunch and texture. These cookies have everything you are looking for! Ginger Molasses Cookies

Ginger Molasses cookies are the perfect cookie for the winter months. They’re soft, chewy, spicy and sweet and go great with a cup of milk or tea. They go even better as the fourth recipe that is part of my #12DaysOfChristmas series on my blog! These Ginger Molasses Cookies are inspired by the infamous Ginger Molasses cookies at Starbucks. It’s pretty basic, I know, but I love the chewy texture of these cookies…it’s almost comforting! I also adore the sparkle that these cookies have from being rolled around in granulated sugar before they are baked. The “12 Days of Christmas” series continues today on my blog! For the third day of Christmas, I have another traditional recipe—Shortbread Cookies! This Shortbread Cookie recipe has been passed down in my family for generations and was originally developed by my great-grandma. I have never met her, but I know that she would be happy with me sharing her recipe with all of my readers. However, I bet she would have never imagined that I would share it over the internet 😛 I have had many shortbread cookies before and I can definitely say that this one is, hands down, the best I have ever had. Chocolate Rudolph Cookies

You know Dasher and Dancer and Prancer and Vixen. Comet and Cupid and Donner and Blitzen. But do you recall, the most famous reindeer of all? It is the second day of the #12DaysOfChristmas series and do I ever have the perfect holiday cookie for you! These chocolate and cherry cookies are named after Rudolph the Red Nosed Reindeer, the true star and hero of Christmas. In my household, Christmas just isn’t Christmas without these Chocolate Rudolph Cookies. My mom got this recipe from a Christmas Cookie magazine in the 90’s and she has been making them ever since. These fudgy chocolate cookies have a chewy, brownie-like base and are adorned with bright Maraschino cherries (to look like Rudolph’s nose). The richness of the cocoa combined with the sweetness of the Maraschino cherry is an unexpected flavor combination for the holiday season, but it works so well! What’s In Season: Spring

The start to the spring season has officially begun today and I couldn’t be happier! Pink, purple and yellow flowers have begun popping up all over the city and little lime green buds have been emerging from the trees- it’s a start of a fresh new season! Besides these tell-tale signs of spring, what I mostly look forward to this season is the wonderful new produce that is hitting the market shelves. Don’t get me wrong, I love winter veggies, but there is only so much cabbage, kale and potatoes you can eat. Spring brings fresh salad greens, tender asparagus spears, crunchy radish and rhubarb, colourful chard, artichokes and refreshing herbs- all of which can brighten up any spring dish. What’s more is that these spring foods are delicate and tasty on their own , so you don’t have to do too much to them to make them taste good. Green Smoothie

We are 25 days into the new year and I have finally found the time to get back into blogging. While it appeared like I was on a mini vacation, this past month has been a whirlwind and I have been extremely busy- with an exciting event and a not-so-exciting event. First, the exciting event. To start off the new year I did something crazy… I moved to Victoria, BC! I have to get my About Me page updated now 😛 Talk about new year, new me! I just got a new job based in Victoria so we packed up and move out to The Island. Surprisingly, the move went incredibly smooth considering that we had to travel from the mainland to Vancouver Island- only about 70 kilometres- but we (and all my stuff) had to take a ferry to get there. I have moved a lot in the past few years and even though moving kind of sucks, I really like the feeling of having a “fresh start” and a new environment around me. …

Homemade Sausage Rolls

It’s Wednesday and I am back again with another #AppyHolidays post! This week I am featuring the ultimate holiday appetizer on the blog: Sausage Rolls. Everyone loves these meaty appetizers, especially around the holidays. Not only do they taste delicious, they are super easy to make- even from scratch! Simply assemble some store bought puff pastry with ground chicken and turkey sausage and a few other festive ingredients and you’ll have a great holiday appetizer that will fly off the plate in seconds! Read on to see how I make them! For the sausage filling, I like to combine both sausage meat and ground meat in this recipe. After testing the recipe a few times, I’ve noticed that using plain sausage meat in the recipe yields really oily/soggy Sausage Rolls… which doesn’t let the puff pastry rise enough. By adding a bit of ground chicken, it absorbs some of the fat and makes the filling a bit lighter, but still super flavourful. In this recipe I like to use ground white meat chicken with spicy …
