Gluten-Free Almond Thumbprint Cookies

I didn’t forget about my Gluten-Free friends during the #12DaysOfChristmas! I have made this delicious and not-too-sweet cookie recipe using almond flour and whole almonds. These Gluten-Free Almond Thumbprint Cookies are inspired by may grandma’s almond cookie that she makes every Christmas. While hers are made with ground almonds, marzipan and flour, I am keeping my recipe 100% gluten-free. These cookies are much lighter but pack a ton of almond flavour just like my grandma’s recipe. In this recipe, I use ground almond flour, almond extract and whole almonds to give these cookies lots of flavour and texture. The ground almond flour makes the cookie crumble nicely and have a bit of a bite while the almond extract adds a deep almond flavour. The whole almond on top of the cookie adds lots of crunch and texture. These cookies have everything you are looking for! Gluten-Free Jam Thumbprint Cookies

We can’t get through the holiday season without some sort of jam cookie. Jam cookies are so classic and so retro, and I think that everyone’s parents or grandparents have made them some similar style cookie before. This year, I have taken a different approach to making these jam cookies by making them gluten-free! While I am not gluten-free, I definitely appreciate these Gluten-Free Jam Thumbprint Cookies around the holidays since these cookies are a bit lighter and won’t make you too bloated after a meal…unless you eat the whole tray 😛 In this recipe I simply substitute all purpose flour for almond flour, which is simply made of finely ground almonds. The almond flour gives the cookies a slight almond flavour itself, but I amp up the flavour with a bit of almond extract. The almond flavour in combination with the raspberry and apricot jam are such great flavour combinations that everyone is sure to love! Gluten-Free Chocolate-Peppermint Crinkle Cookies

With Christmas just around the corner, I thought I would share some tasty Christmas cookie recipes with you all. For me, Christmas just isn’t Christmas without making tons of cookies. I love to make a variety of cookies, some traditional shortbread cookies, jam cookies, chocolate cookies and some fun cookies that I used to make as a kid with my mom. It really brings back such nice memories 🙂 For this Christmas, I thought I would do a spin on a traditional Chocolate Crinkle Cookie by adding one of my favourite winter flavours: peppermint! I can’t seem to get enough peppermint these days. I’ve run through three boxes of peppermint tea so far and I love adding a splash of peppermint extract to my hot chocolate. With this cold, dreary March we have been having so far, I am in desperate need of a pick me up. With the weather we have been having recently (it snowed AGAIN on Sunday) I have been so sluggish and unmotivated to do anything. Coconut & Date Bars

Apples with nut butter. Bananas. Carrot sticks and hummus. Frozen grapes. A handful of mixed nuts. I’m stuck in a healthy snack rut. 🙁 As good as I am with coming up with new recipes, the meal that I struggle with the most is snacks. Winter Fruit Salad

Nowadays, it’s typical for every fruit and vegetable in the grocery store to have a passport. In Canada, this makes sense as the majority of the country is frozen during our long winters, which makes it difficult to grow food (other than what can be grown in a greenhouse). In reality, our fruit season is relatively short- from June to late October- depending on where you are in Canada and what you are growing…so thank goodness for imports! During this time of year, many fruits that are sold in BC and throughout Canada are imported from warmer climates- particularly from California, Florida, and Mexico. While these fruits aren’t local, we still need to eat fruit to get our vitamins and to stay healthy. This Winter Fruit Salad combines the most flavourful fruits of the season from all over the world together in salad form.
