Pea & Pesto Pasta

One of my favourite vegetables that I love to eat in the spring are fresh peas. They are incredibly sweet, tender and flavourful and are a nice little treat instead of frozen peas that we eat year-round. This recipe for my Pea & Pesto Pasta celebrates this seasonal vegetable and is super quick and easy! Peas & Basil are a Match Made in Heaven Peas go great with just about anything, but nothing compares to the combination of fresh peas and basil. The sweetness of the peas balances the intense basil flavour and is incredibly refreshing together! To bring these two ingredients together by mixing peas into a traditional basil pesto. I simply add cooked fresh peas to a food processor with typical pesto ingredients including basil, Parmesan cheese, nuts, lemon, and garlic. With a touch of a button, all of these delicious ingredients gets chopped up and pureed into a creamy green pesto sauce that is perfect for coating freshly cooked pasta. Asian Heritage Rice Bowl

If you are looking for a new healthy meal recipe that packs a ton of nutrition and is also delicious, look no further than my Asian Heritage Rice Bowl. Rice bowls (and their vegetarian equivalent, Buddha bowls) have been popping up everywhere lately and I can understand why. They are a fantastic way to get a variety of colourful vegetables, fruits, proteins and grains into your diet. Essentially, the bowl starts off with a base (often rice or salad) and you simply add handfuls of each ingredient to the bowl to make up a full meal. These Asian Heritage Rice Bowls were originally inspired by the chicken rice bowl at Heritage Asian Eatery in downtown Vancouver. As I am now living in Victoria, I miss these bowls SO MUCH and there isn’t anything here that is quite like it (or is of good enough quality). Salt Spring Island Mussels with Ale-Cream Sauce

Happy St. Patrick’s Day everyone! No matter if you are Irish or not, you can’t pass up this holiday without a beer or two. But rather than drinking it straight, why not cook with it? And if some local mussels, garlic, cream and lots of parsley end up in the mix, it’s all the better! Shortly after moving to the west coast, mussels became one of my favourite seafoods to eat. They are relatively inexpensive for seafood and can be cooked up in many different ways. I really enjoy the local Salt Spring Island mussels which are line-grown off the coast of Salt Spring Island, in the Strait of Georgia. The waters around Salt Spring Island are cold, incredibly clean and there is a high abundance of phytoplankton and microalgae- which the mussels love to eat. Because of this environment, the mussels are deep orange in colour and are consistently sweet and briny- truly the best I’ve ever had!
