BC Blueberry Pie

It’s the last day of #BCBlueberryWeek here on the blog! I’m sad to see it go but I have a TON of blueberries still left in the fridge…so maybe I will keep it going with a few more blueberry recipes in the near future. But I hope that you really enjoyed the recipes I showcased so far- from the summer go-to Blueberry and Grilled Chicken Salad, to the healthy Honeyed Greek Yogurt and Blueberry Jam, to the savoury Blueberry Stuffed Chicken– they were all delicious! However, I think that I have saved the best recipe for last…a good ol’ classic…BC Blueberry Pie. The best way to celebrate blueberry season is with a blueberry pie! Honeyed Greek Yogurt with Blueberry Jam

#BCBlueberryWeek continues today with a healthy, blueberry-filled breakfast recipe. This recipe for Honeyed Greek Yogurt with Blueberry Jam is so sweet and delicious that it could almost be a healthy dessert rather than a breakfast! Even though this is a simple and straightforward recipe, the combination of ingredients are set to stand the test of time. Honey, lemon and blueberries are commonly used in breakfast recipes and are considered a classic combination for a reason. Yep..those are real blueberry leaves! I opted to add the honey and lemon directly into the Greek yogurt, rather than the blueberry jam itself so that the flavours do not cook out or fade during the cooking process. Plus, Greek yogurt can sometimes be tangy (perfectly complimented by the lemon zest), but are sometimes bland overall, so the addition of honey and lemon really makes it taste so much better. You only need to add a little bit of honey to the Greek yogurt, since the blueberry jam gets mixed in with the yogurt as you eat it. Speaking of …

BC Blueberry Week

We are in the height of blueberry season right now in BC and I just can’t get enough of these delicious sweet berries.  I actually enjoy blueberries so much that I bought not one, but TWO five-pound boxes of these sweet little berries to indulge in before the season is over! Blueberry-Almond Tart

Summertime and blueberries go hand-in-hand. These tender, juicy blue jewels are in season right now and I just cannot get enough of them- especially the locally-grown BC blueberries. Lucky for me, BC produces some of the best blueberries in the world, and what a way to celebrate them with none other than my Blueberry-Almond Tart. It is just perfect for summer! The Lazy Mojito

Happy first day of Summer! I have been crazy busy the last few weeks and I haven’t found enough time to do any recipes for you guys! I’m sorry! But you will probably forgive me when you find out why I have been so busy…. I’m going to Europe for a month! I am BEYOND excited! My first stop is in jolly old London- where I will be a bridesmaid in my best friend, Anita’s, wedding! I met Anita in my second year of undergrad at UofT on Halloween. Up until the end of our fourth year we were inseparable. Anita moved back to Iran and later studied interior design in Italy and we haven’t seen each other in person since that last day of undergrad when she flew home 🙁 It will be quite the reunion! And my other bestie, Tyler (who moved to Australia after undergrad and who I haven’t seen in 2+ years) will also be joining so it is going to be even better! After London, I will be traveling to …
