The Lazy Mojito

Happy first day of Summer!

I have been crazy busy the last few weeks and I haven’t found enough time to do any recipes for you guys! I’m sorry! But you will probably forgive me when you find out why I have been so busy…. I’m going to Europe for a month! I am BEYOND excited!

My first stop is in jolly old London- where I will be a bridesmaid in my best friend, Anita’s, wedding! I met Anita in my second year of undergrad at UofT on Halloween. Up until the end of our fourth year we were inseparable. Anita moved back to Iran and later studied interior design in Italy and we haven’t seen each other in person since that last day of undergrad when she flew home 😦 It will be quite the reunion! And my other bestie, Tyler (who moved to Australia after undergrad and who I haven’t seen in 2+ years) will also be joining so it is going to be even better!

After London, I will be traveling to Rome, where I am going to eat all of the pasta in sight! Next, I go to Naples, where I am going to eat all the pizza in sight! There’s going to be sooooo many carbs!Β It will all balance out when I reach the Amalfi Coast where I will hang out at the beach and eat the freshest seafood and fruit available! I can’t wait to check out the markets there!

After Amalfi, I head to Prague and Berlin- again thinking about food- where I will drink LOTS of good beer! Next, I go to Amsterdam (not sure what food they are known for, but I’m sure I’ll find something!) and I am definitely going on a nice bike ride around the city. Then, I go off to Brussles, where I will consume my weight in chocolate, and finally end up in Paris, where baguettes, croissants, and fresh fruit and veggies will be my life.

Clearly, this trip is focused on food for me…never mind the sightseeing! But that’s how I live my life LOL!

Anyway, from the amount of places I am going and the amount of planning that is involved, you can see why I have been so busy! And perhaps you understand why I need a drink!

For this weeks #PatioSeries, I present The Lazy Mojito. This recipe uses all the basic ingredients of a Mojito (rum, lime, sugar, mint, sparkling water) but the preparation method is slightly different. For my Lazy Mojito, rather than taking the time to muddle the lime and sugar and mint, you just throw everything (except the sparkling water) into a cocktail shaker (or Mason jar) with some ice and give it a good, vigorous shake for 30 seconds. This also helps get out some of your frustrations at the end of the day! Once everything is mixed up, pour it into a glass and top with sparkling water! I also decided to add some fresh BC blueberries to my Lazy Mojito because they are so sweet and totally in season right now. Topped of with a sprig of mint and a wedge of lime and you have yourself a cocktail ready in under one minute! And that’s exactly what I like on a Friday night!

Try out this recipe and let me know what you think! Also, be sure to follow my Instagram (@seasonserveblog) for great food photos, recipes, and of course to see all the great food I will be eating in Europe!
