Summertime and blueberries go hand-in-hand. These tender, juicy blue jewels are in season right now and I just cannot get enough of them- especially the locally-grown BC blueberries. Lucky for me, BC produces some of the best blueberries in the world, and what a way to celebrate them with none other than my Blueberry-Almond Tart. It is just perfect for summer!
As you can see from my previous blog and Instagram posts, I recently took a trip across Europe for the entire month of July. While Europe was nice and all, I am so happy to be home. Not so much for going to work and doing all my adult things…but just to be home in my apartment and cooking my own food with local ingredients. I mean….the food in Europe was good and all, but it’s nothing like homemade.
I knew that upon coming home there was two things that I wanted: 1) Pork and chive dumplings (Love my Asian food), and 2) blueberries. During my trip, I saw so many Instagram posts featuring recipes made with BC blueberries and I was so envious. Luckily, blueberry season reaches its peak in August and September, so I knew I wouldn’t miss out on these tasty blue jewels.
Typically, I make a pie to celebrate blueberry season (see the recipe for my BC Blueberry Pie), but this year I opted to go for a tart. Never mind making a double-pie crust! Plus, I have a really great sweet tart crust recipe in my repertoire. I just wasn’t sure if the tart could handle holding up an entire batch of blueberry filling without getting soggy. Rather than testing it out in one go (and potentially ruining the whole dessert), I decided to mitigate the potential sogginess with the addition of toasted sliced almonds on the bottom of the shell. Sometimes I can be so smart! And of course I didn’t stop there- I also decided to try adding toasted almonds and almond extract directly to the tart dough. It turned out amazing of course, and as a bonus the blueberry filling did not make the tart shell soggy!
Mhmmm….juicy filling, not soggy crust!
This recipe is definitely a winner and I can’t wait to experiment with other delicious summer fruits. Hey, this might actually work with winter fruits as well! You’ll have to stay tuned for that! In the meantime, enjoy a slice of this Blueberry-Almond Tart for yourself!
