It’s the last day of #BCBlueberryWeek here on the blog! I’m sad to see it go but I have a TON of blueberries still left in the fridge…so maybe I will keep it going with a few more blueberry recipes in the near future. But I hope that you really enjoyed the recipes I showcased so far- from the summer go-to Blueberry and Grilled Chicken Salad, to the healthy Honeyed Greek Yogurt and Blueberry Jam, to the savoury Blueberry Stuffed Chicken– they were all delicious! However, I think that I have saved the best recipe for last…a good ol’ classic…BC Blueberry Pie.
The best way to celebrate blueberry season is with a blueberry pie!
If you ask me, this is the best way to celebrate blueberry season! It was actually the first blueberry recipe I made this summer when the blueberries arrived at the markets. I love this pie because you get mouthful after mouthful of sweet, heavenly blueberry filling with a little crunch and savoury flavour from the crust. This is what blueberry dreams are made of!
This pie crust recipe is what I use for all of my sweet pie recipes. It’s straightforward and has never failed on me, even with really liquidy pie fillings like blueberry pie filling. It holds up throughout the baking process and is just flaky enough (I don’t like overly flaky crust!) just like a pie crust should be. Plus, you can get fancy with it like I did with my lattice crust as long as you work with this pie crust fast and don’t let it get too warm!
The crust is sooo golden brown thanks to a tried and true baking trick: egg wash!
As for the blueberry filling, it couldn’t be any simpler. I add tons of blueberries to a pot followed by a just a touch of sugar (because the berries are sweet enough on their own) and cinnamon. Bring it all to a boil and add a bit of cornstarch. The cornstarch helps to thicken the blueberry pie filling so that it doesn’t leak all over or into your pie crust. It also makes the filling holds up well when you slice into the cooked pie. You definitely don’t get the filling pouring out all over your plate and it stays between the pie crust perfectly.
