Meal Prep Breakfast Sandwiches

I am back again with another great recipe for my #BackToSchool series. If you are returning to school, or are just trying to get back into your work routine, then these recipes will really help you out! They are quick, simple and can be enjoyed by both adults and children. If you follow me on Instagram, you will know from my stories that I have recently begun meal prepping my food for the week. I have never done meal prep before, but I have been fairly busy lately and have found myself struggling to eat well-balanced meals throughout the week. Plus, having to clean up after every meal is a bit of a slag, so I wanted to test out this concept of meal prep. I can say that from just being two weeks into it, I am in LOVE! Don’t get me wrong, I love cooking, I just find that during the week it’s a bit too much work! The prep, the cooking and the clean up? No thanks. I’d rather be out gardening, …

Asian Heritage Rice Bowl

If you are looking for a new healthy meal recipe that packs a ton of nutrition and is also delicious, look no further than my Asian Heritage Rice Bowl. Rice bowls (and their vegetarian equivalent, Buddha bowls) have been popping up everywhere lately and I can understand why. They are a fantastic way to get a variety of colourful vegetables, fruits, proteins and grains into your diet. Essentially, the bowl starts off with a base (often rice or salad) and you simply add handfuls of each ingredient to the bowl to make up a full meal. These Asian Heritage Rice Bowls were originally inspired by the chicken rice bowl at Heritage Asian Eatery in downtown Vancouver. As I am now living in Victoria, I miss these bowls SO MUCH and there isn’t anything here that is quite like it (or is of good enough quality). So, when I find myself getting a Heritage Asian Eatery craving, I make this bowl.  While Heritage’s bowl uses a whole chicken leg, I opt for using a chicken breast …

Croque Monsieur & Madame

If you want to feel like you have been transported to a quaint bistro tucked away somewhere in France, look no further than this recipe for Croque Monsieur and Croque Madame. For me, this classic French sandwich is so much more than a sandwich… it’s a masterpiece. A work of art. Something truly amazing to behold. A Croque Monsieur and Croque Madame are simply ham and cheese sandwiches that are taken to the next level. Both these sandwiches are made of simple, everyday ingredients but they are combined and assembled in a way that makes the sandwiches look so elegant and taste so rich. That must be because of all the butter… Now if you are wondering what the difference between a Croque Monsieur and a Croque Madame is, it’s simply the addition of a fried egg. If you make this sandwich on it’s own (no fried egg involved), it is called a Croque Monsieur. Top this sandwich with a fried egg and voilà- you have a Croque Madame. I really do prefer the Croque …
