Italian Fig Salad

In the midst of summer, it is easy to turn to simple salad recipes. They don’t require any cooking or any intense preparation, and can be assembled (and eaten!) within minutes. Plus, a nice cool salad is perfectly refreshing on a warm summer day! Move Over Lettuce Leaves… While I eat lots of green salads, I like to mix things up once in a while to enjoy a more decadent salad. Because lettuce leaves are not always that filling!  I tend to lean towards more composed salads that use some fancier ingredients. Mozzarella and prosciutto are definitely very decadent, and I could probably just eat these two on their own. But adding in some sweet summer figs and basil make this salad a bit healthier and really bring the flavours together. Radish Salad with Lemon Vinaigrette

Spring has officially sprung! Now that we have made it through winter and there are nothing but warmer days ahead, there are so many fun activities…and fresh new foods to look forward to! To kick off the spring, I am featuring a recipe with the quintessential veggie of season: the radish. Radishes are incredibly refreshing and light. They are a great alternative to heavy winter veggies that we have been eating for the past 6 months or so. I particularly enjoy the crunchiness and peppery taste of radishes. Plus, radishes come in so many varieties and colours that they are just beautiful to look at! 10/10 refreshing… In this recipe for Radishes with Lemon Vinaigrette, traditional red radishes are thinly sliced and are combined with creamy white beans, chopped dill, and parsley. As we progress through the spring season, I am now looking to make some lighter and healthier meals. Think lots of fresh veggies, healthy grains, and fish. So far, I have come up with some amazing recipes  that have been super refreshing and perfect for the warmer days to come. This week, I’m sharing one of the best spring/summer salads out there: a Niçoise Salad– but with a little twist 😉 First off, if you have never had a Niçoise Salad before, make it your mission to make this recipe ASAP. It is a composed salad meaning that the ingredients are cooked separately and assembled together. What’s In Season: Spring

The start to the spring season has officially begun today and I couldn’t be happier! Pink, purple and yellow flowers have begun popping up all over the city and little lime green buds have been emerging from the trees- it’s a start of a fresh new season! Besides these tell-tale signs of spring, what I mostly look forward to this season is the wonderful new produce that is hitting the market shelves. Don’t get me wrong, I love winter veggies, but there is only so much cabbage, kale and potatoes you can eat. Spring brings fresh salad greens, tender asparagus spears, crunchy radish and rhubarb, colourful chard, artichokes and refreshing herbs- all of which can brighten up any spring dish. What’s more is that these spring foods are delicate and tasty on their own , so you don’t have to do too much to them to make them taste good. Fall Dinner Party

Out of all the four seasons, fall is definitely my favourite. Not only do I enjoy wearing my cozy sweaters in the cooler temperatures, drinking Pumpkin Spice Lattes, and watching the leaves turn a rainbow of colours, I love it because of all the delicious, seasonal foods that come along with it. Fall harvests bring us countless varieties of apples, squash, brussels sprouts, carrots, and parsnips…the list goes on…all from which we can make hearty and comforting foods. And what better way to enjoy these delicious seasonal foods than with a celebratory fall dinner party?! When you think about it, fall is the perfect season to entertain at home. It’s not too hot, meaning that you can have your stove and oven going all day and you won’t be dying of heat in the kitchen, and it’s not too cold, meaning that outdoor entertaining is still possible. Couscous Salad with Grilled Halloumi

With fall being just around the corner, our outdoor BBQ and grilling days are numbered. I know when December and January rolls around, I am really going to be missing hanging out on the patio and eating grilled chicken, burgers and grilled veggies. So in these last few weeks of prime BBQ and grilling season, indulge in your favourite grilled foods and mix it up with this recipe for Couscous Salad with Grilled Halloumi. Halloumi is a very firm cheese that originated on the island of Cyprus. It is typically made with a combo of sheep and goat milk (or even cow milk), salt and dried mint. Once made, the cheese sits in brine and gets super flavourful and firm. Now when I say that it is a firm cheese, I mean it. This cheese is so firm that you can grill it, pan fry it, do whatever you want to it over a heat source and it will not melt. It’s kind of magical actually.
