Italian Fig Salad

In the midst of summer, it is easy to turn to simple salad recipes. They don’t require any cooking or any intense preparation, and can be assembled (and eaten!) within minutes. Plus, a nice cool salad is perfectly refreshing on a warm summer day! Move Over Lettuce Leaves… While I eat lots of green salads, I like to mix things up once in a while to enjoy a more decadent salad. Because lettuce leaves are not always that filling!  I tend to lean towards more composed salads that use some fancier ingredients. Mozzarella and prosciutto are definitely very decadent, and I could probably just eat these two on their own. But adding in some sweet summer figs and basil make this salad a bit healthier and really bring the flavours together. I would love to say this these aren’t your Nonnas meatballs, but that is exactly what these are! Delicious ground beef and ground pork come together (with a few other key Italian ingredients) to make the perfect and most comforting meatball recipe you have ever had!
