Orange & Almond Biscotti

I couldn’t let the holidays pass us by without featuring an Italian cookie in my #12DaysOfChristmas series! Growing up in a part-Italian family, we always looked forward to the Italian treats and desserts. From tiramisu to cannoli we had it all! But my all-time favourite dessert recipe (which just so happens to be a cookie recipe) is Biscotti. Biscotti are a very divisive cookie; some people love them and some people really dislike them. I personally enjoy the hard, crunchy and crumbly texture of these cookies, especially when enjoyed the traditional way with a espresso or tea. They get their hard texture from being baked twice. The dough is first formed into a large log and baked whole. After that, the log is sliced into pieces and baked once again to really dry out the biscotti cookies. There are endless biscotti recipes and flavours out there, but I really love this combination of  Orange and Almond. Gluten-Free Almond Thumbprint Cookies

I didn’t forget about my Gluten-Free friends during the #12DaysOfChristmas! I have made this delicious and not-too-sweet cookie recipe using almond flour and whole almonds. These Gluten-Free Almond Thumbprint Cookies are inspired by may grandma’s almond cookie that she makes every Christmas. While hers are made with ground almonds, marzipan and flour, I am keeping my recipe 100% gluten-free. These cookies are much lighter but pack a ton of almond flavour just like my grandma’s recipe. In this recipe, I use ground almond flour, almond extract and whole almonds to give these cookies lots of flavour and texture. The ground almond flour makes the cookie crumble nicely and have a bit of a bite while the almond extract adds a deep almond flavour. The whole almond on top of the cookie adds lots of crunch and texture. These cookies have everything you are looking for! Citrus & Mint Salad

So long are those days of summer where just about everything is in season. I have really been missing garden fresh zucchini, freshly picked berries (especially strawberries) and tomatoes straight from the vine lately. But up here in Canada, we can’t really do much about it but import our foods from the south during the winter. Of course with imports, the quality of the food can vary greatly and I find that most vegetables and fruits just don’t taste quite right. That is, except for citrus fruits! Citrus is my go to fruit during the winter months since it is in peak season and tastes so light andrefreshing; it is a great change of pace from eating those hearty winter comfort foods. Plus, all the vitamins keep you from getting a cold as well! The citrus can also really stand the long trip up into Canada too as the thick peels keep the fruit fresh in its own natural packaging. Blueberry-Almond Tart

Summertime and blueberries go hand-in-hand. These tender, juicy blue jewels are in season right now and I just cannot get enough of them- especially the locally-grown BC blueberries. Lucky for me, BC produces some of the best blueberries in the world, and what a way to celebrate them with none other than my Blueberry-Almond Tart. It is just perfect for summer! As you can see from my previous blog and Instagram posts, I recently took a trip across Europe for the entire month of July. While Europe was nice and all, I am so happy to be home. Not so much for going to work and doing all my adult things…but just to be home in my apartment and cooking my own food with local ingredients. I mean….the food in Europe was good and all, but it’s nothing like homemade.
