Give Thanks: Thanksgiving Tablescape & Menu

Thanksgiving dinner is quite possibly my most anticipated dinner of the entire year. You get to take time to reconnect with friends and family amidst our hectic schedules, you get to enjoy the beautiful crisp fall weather, and you get to eat lots of delicious foods! I have always enjoyed Thanksgiving as a holiday in general since it’s a holiday centered around food. No gifts. No balloons. Curried Butternut Squash Soup

  As the autumn days get cooler and rainier, I am in constant search for something to keep me warm. Whether it is a cup of peppermint tea (my current obsession) or a cozy blanket, nothing beats a nice warm cup of soup. Soup has to be one of my most favourite meals. I could probably eat it every day and never get sick of it since there are so many soup variations out there. On the lighter and healthier side we have classics like tomato and basil soup, chicken noodle soup, lentil soup, bone broth soup, minestrone soup- they’re all amazing. And on the more decadent side we have cream of mushroom soup, broccoli cheddar soup, French onion soup, beef stew with dumplings, ramen- the list goes on….and I love them all! Hmm..now that I’m thinking of all these soups, I need to post more on the blog! Kabocha Squash Curry

As we can’t seem to shake the cold here in Vancouver, I have been making lots of hearty recipes to keep me warm and full. I honesty feel like a hibernating bear being on the eat, sleep, and avoid the outside as much as possible-train. To keep me full and warm this recipe for Kabocha Squash Curry is just the ticket. Kabocha Squash is a variety of squash that originated in Japan. If you haven’t had it before, it tastes like a cross between a sweet potato, a pumpkin and chestnuts. If that doesn’t scream “best winter vegetable ever”, I really don’t know what does. Kabocha Squash has a tough green or orange speckled rind (so make sure you have a sharp knife to cut it with), but you can actually eat the rind as it is very tasty and nutritious. After trying this squash for the first time it instantly became one of my top favourites (maybe almost as good as butternut squash!).
