Penne alla Rosé

Today, I am kicking off my #BackToSchool series on my blog! This time of the year can be super busy, and after a long day, the last thing you want to do is make dinner. Lucky for you, I have come up with a week’s worth of recipes to get you back into your school (or work) routine. These meals are all very quick, healthy, and taste delicious! For my first recipe, I have made a delicious Penne alla Rosé. Now this sounds fancy, but this is essentially just pasta with a creamy tomato sauce. A few simple additions make this pasta incredibly delicious, and the best part is that this whole recipe can be made in just 15 minutes! I know…I can’t believe it either! How to Pull Off this Recipe in 15 Minutes… This Penne alla Rosé recipe requires a bit of multi-tasking, but I can hardly call it that since you don’t have to do too much work when boiling pasta. Once your pasta is in the pot and boiling, you can …

Ricotta & Spinach Stuffed Shells

Ricotta cheese, spinach, pasta, and tomato sauce are four ingredients that make the best comforting Italian dishes. These four ingredients are very versatile and can be combined in numerous ways, including lasagna, ravioli, tortellini, manicotti, and in this recipe for Ricotta & Spinach Stuffed Shells. While the former dishes require a bit of time, assembly, and patience, the latter is super quick and easy. In fact, it is so easy that you could make this any night of the week! For the full recipe for Ricotta & Spinach Stuffed Shells, click here! These can be prepared in advance or can easily be prepared together as other parts of the dish cook or cool down. I begin by creating the ricotta and spinach mixture as the spinach needs to be cooked and cooled down before adding it into the ricotta cheese. I also add in some sautéed onions, garlic, cayenne …

Sweet Potato Gnocchi with Sage Butter Sauce

A delightful fall twist on my traditional gnocchi recipe- this sweet potato gnocchi are like little mini hugs. These sweet little nuggets are seasoned with traditional fall spices- nutmeg and cinnamon- and are complemented by a rich buttery sauce and crisp savory sage leaves. Enjoy these as a side or a main course and truly experience the flavours of the season. See the recipe here!

Homemade Gnocchi

I don’t make homemade gnocchi just for anybody- so if you are lucky enough to get some, you are very special to me. Making gnocchi from scratch is a true expression of love. Just like love, gnocchi requires good ingredients, time, a bit of skill, and passion. It simply cannot, by any means, be fake, forced, or overworked. If all goes well, you will have soft, pillowy, pasta that seduces and pleases, that makes you feel like you are floating on a cloud (in this case, made of flour and potatoes) when you eat it. Take some time and show a special someone how much you care with this true labour of love. See the recipe here!
