Citrus & Mint Salad

So long are those days of summer where just about everything is in season. I have really been missing garden fresh zucchini, freshly picked berries (especially strawberries) and tomatoes straight from the vine lately. But up here in Canada, we can’t really do much about it but import our foods from the south during the winter. Of course with imports, the quality of the food can vary greatly and I find that most vegetables and fruits just don’t taste quite right. That is, except for citrus fruits! Citrus is my go to fruit during the winter months since it is in peak season and tastes so light andrefreshing; it is a great change of pace from eating those hearty winter comfort foods. Plus, all the vitamins keep you from getting a cold as well! The citrus can also really stand the long trip up into Canada too as the thick peels keep the fruit fresh in its own natural packaging. Couscous Salad with Grilled Halloumi

With fall being just around the corner, our outdoor BBQ and grilling days are numbered. I know when December and January rolls around, I am really going to be missing hanging out on the patio and eating grilled chicken, burgers and grilled veggies. So in these last few weeks of prime BBQ and grilling season, indulge in your favourite grilled foods and mix it up with this recipe for Couscous Salad with Grilled Halloumi. Halloumi is a very firm cheese that originated on the island of Cyprus. It is typically made with a combo of sheep and goat milk (or even cow milk), salt and dried mint. Once made, the cheese sits in brine and gets super flavourful and firm. Now when I say that it is a firm cheese, I mean it. This cheese is so firm that you can grill it, pan fry it, do whatever you want to it over a heat source and it will not melt. It’s kind of magical actually. Happy first day of Summer! I have been crazy busy the last few weeks and I haven’t found enough time to do any recipes for you guys! I’m sorry! But you will probably forgive me when you find out why I have been so busy…. I’m going to Europe for a month! I am BEYOND excited! My first stop is in jolly old London- where I will be a bridesmaid in my best friend, Anita’s, wedding! I met Anita in my second year of undergrad at UofT on Halloween. Up until the end of our fourth year we were inseparable. Anita moved back to Iran and later studied interior design in Italy and we haven’t seen each other in person since that last day of undergrad when she flew home 🙁 It will be quite the reunion! Patio-Perfect Red Wine Sangria

Looks like we are 2-0 for sunny Fridays this month! How perfect is that for my #PatioSeries?! For this weeks post, I present the patio drink of all patio drinks: sangria. Let’s be real…I couldn’t do a #PatioSeries without my recipe for Patio-Perfect Red Wine Sangria! I love everything about sangria: First, there is red wine involved- enough said. Second, there is some Triple Sec in there which gives the sangria a nice orangy and boozy kick. Typically, most sangria recipes also call for the addition of brandy. I decided to omit it in my recipe since brandy is not really my favourite flavour, and with the addition of orange juice and sparking water (also a much cheaper alternative) you still get a great tasting sangria. Third, sangria is the perfect drink + snack combo. If you happen to get a little hungry while sipping away on your sangria, simply snack on the alcohol soaked fruit.
