Cream Cheese & Bacon Stuffed Mushrooms

It’s Tuesday and you know what that means… I am back again today with another #AppyHolidays post! This week, I am sharing my Cream Cheese & Bacon Stuffed Mushroom recipe. These Cream Cheese & Bacon Stuffed Mushrooms are the perfect little appetizer that your guests can pop right into their mouths and savour during a cocktail party or right before a festive holiday meal. They are also very easy to make and can be served straight out of the oven or at room temperature. These mushrooms are fabulous either way! I particularly love this recipe since mushrooms are in season and widely available. Plus, during the winter here in Canada, we don’t always have fresh local produce year round (other than greenhouse veggies in the winter)! However, mushrooms are available year-round thanks to the amazing local mushroom farmers! While you can stuff mushrooms with just about any filling, I went for cream cheese and bacon this year. Mushroom Turnovers

It’s Wednesday and you know what that means… time for another #AppyHolidays post! This week I’m making a delicious Maltese appetizer that is guaranteed to fly off your table this holiday season: Mushroom Turnovers. This is a savoury take on the classic sweet turnover recipe, which is typically filled with fresh fruit or jam. Meaty cremini mushrooms are fried with onions and thyme and is mixed with creamy, rich sour cream. This delectable filling is then stuffed into a homemade turnover dough (that is if you can resist eating it straight from the pan!) that is made with flour, butter and ricotta cheese. The butter and ricotta cheese really make this dough light and airy yet very sturdy and able to hold the thick mushroom filling. While this recipe is quite a lot of work, the turnovers can be filled and frozen well in advance and can be cooked from frozen… which is super helpful around the holidays! Rosemary Roast Beef with Red Wine Sauce

Now, there’s nothing that says “I’m an adult” more than cooking yourself a roast beef. I mean- who does that besides moms and grandmas? Not any young adult I know! While cooking a roast beef can be a bit daunting, it is actually really easy as the oven does most of the work. Just follow these four tricks and you will have a nice, juicy roast- perfect for Sunday suppers! The first trick is to take the roast beef out of the refrigerator at least 30 minutes before you want to cook it. Allowing the roast to warm up to room temperature ensures that it cooks much more evenly throughout. If the center of the roast is still cold, then it won’t cook evenly, leaving you with an overcooked outside and a rare middle. The second trick is to sear the roast before baking in the oven. After rubbing the beef with olive oil, seasoning with salt, pepper and dried rosemary, and stuffing it with garlic, I use a well-seasoned cast iron pan to sear the roast on …
