What is Halloumi?
Halloumi is a semi-hard, unripened cheese made from a mixture of goat’s and sheep’s milk, and sometimes cow’s milk. Originating from Cyprus, halloumi is known for its high melting point, which makes it perfect for grilling and frying. When grilled, halloumi develops a crispy, golden-brown crust while maintaining a soft and chewy interior. Its unique texture and savory flavor make it a fantastic addition to many Mediterranean and Middle Eastern recipes.
My Best Tips for Grilling Halloumi
Here are my best tips on how to cook halloumi on the grill:
- Slice the Halloumi: Cut the halloumi cheese into thick slices, about 1/2 inch thick. This ensures they hold together well during grilling.
- Prepare the Grill: Preheat your grill to medium-high heat and lightly rub the grates with an oil with a high smoke point, like grapeseed oil, to prevent the halloumi from sticking.
- Grill the Cheese: Lightly brush the halloumi slices with olive oil to prevent sticking. Place the slices on the grill and cook for about 2-3 minutes on each side, or until you see nice grill marks and the cheese is golden brown.
- Remove and Serve: Once grilled, remove the halloumi from the grill and let it cool slightly before slicing and adding to your pita wraps with toum (my own homemade recipe!), lettuce, tomato, and red onion.

Grilled Halloumi Pita Wraps
Ingredients
- 2 blocks halloumi cheese with herbs you can substitute with plain halloumi
- 1 tablespoon olive oil
- 1 tablespoon grapeseed oil
- 4 fresh pitas with no pocket
- ½ cup toum
- 8 green lettuce leaves
- 2 medium red tomatoes cut in half moons 1-centimetre thick
- 1 small red onion thinly sliced
Instructions
- Preheat the grill to 350 degrees F.
- While the grill is heating, slice the halloumi in half through the centre, creating four large rectangles that are 2 to 3 centimetres thick. Brush both sides of the halloumi slices with olive oil. Set aside.
- Once the barbecue is 350 degrees F, scrunch a paper towel into a ball and pour the grapeseed oil onto it. Use the oiled side of the paper towel ball to brush the oil onto the barbecue grates. This will prevent the halloumi from sticking. Place the oiled halloumi onto the grill and reduce the heat to medium. Let the halloumi cook for 4 to 5 minutes per side, or until golden char marks form. Remove from the grill as let cool before slicing each piece of halloumi in half to create 8 long thin strips.
- While the grill is still warm, toast the pita. Add the pita in a single layer to the grill and toast for 2 to 3 minutes per side. This will add flavour to the pita and will make them soft and pliable for wrapping. Remove from the grill as set aside.
- To assemble the pita wraps, place a tablespoon of toum onto the base of the pita and spread it out. Top with lettuce, two pieces of sliced halloumi, 3 to 4 slices of tomato, and a sprinkle of red onion. Serve immediately and enjoy!
