Out of all the seasons, I believe summer is the easiest one to eat super healthy, delicious foods. Over the past few months, I have admittedly gained some extra pounds from stress about all the things going on in the world, having to re-plan our wedding due to COVID-19, and from an unforeseen basement renovation! Crazy times!
If you are in a similar situation or just looking to get healthy, I have a selection of healthy and easy summer recipe ideas to help you shed a few pounds before fall arrives.
Greek Chicken Bowl
This Greek Chicken Bowl is super healthy and gives you a variety of vegetables, protein and fats in one meal! This recipe is great warm as well as cold, and is perfect for meal prep!
Steamed Fish
This Steamed Fish is delicious and healthy! Made with ginger, garlic, scallions and soy sauce, this recipe will transport you to Asia in just one bite! This recipe is very lean but is incredible flavourful and surprisingly filling!
Bruschetta Chicken
Tomato season is upon us and one of my favourite ways to use them up is in this recipe for Bruschetta Chicken. This recipe is great for when you’re craving Italian food, but it is naturally so fresh, healthy and perfect for summer!
Raspberry Sorbet
This is barely a recipe at all! All I do to make this Raspberry Sorbet is to blend frozen raspberries in a blender until totally smooth. Scoop some into a dessert bowl and top with a sprig of mint! In just a few minutes you will have a healthy 100% fruit dessert that will keep you cool and your sweet tooth at bay!
More About What I Am Eating This Summer
Vegetables, Proteins, Fruits & Fats
With all of my summer recipes, I am using a lot of fresh vegetables. There’s so many great vegetables that are in season from tomatoes, to cucumbers, to berries, fresh greens…I am taking advantage of all of these!
I am also focused on incorporating lean proteins such as chicken and fish as well as plant-based proteins such as quinoa, chickpeas and other legumes. Protein is imperative for helping to build muscle and keeping your body fuelled!
Fruit is another area of focus for me since I do have a bit of a sweet tooth! Summertime is the best time to curb sugar cravings since there are so many wonderful natural whole fruits that are in season right now!
And even though fats seem like they’re bad for you, I am focusing on eating good fats like olive oil, coconut oil (in moderation) and fats from nuts and nut butters!
What I’m Eating in Moderation
Eating in moderation is key for me! I know that if I cut out or avoid a food out entirely, I will go crazy and it will make me want it even more! So I am letting myself still eat what I want, but I’m going to eat it once in a while and in smaller quantities. Plus, avoiding foods while being a food blogger is near impossible, so I’m going easy on myself! This will help keep me satisfied and less likely to eat like crazy!
While I enjoy dairy products such as cheese, milk and yogurt, I am still going to enjoy them, just in smaller quantities. Alcohol and sugar (mainly chocolate for me) are some other items that I will be enjoying on occasion. Luckily, I can get my sugar fix in the summer by eating lots of fresh fruits!
