This breakfast recipe is a delicious and healthy way to start off your day! Greek yogurt is packed with lots of protein and blueberries contain lots of antioxidants. A little sweetness from local honey and a bit of lemon zest make this breakfast recipes seem like a healthy dessert!

Ingredients:
- 1 cup fresh blueberries
- 2 tablespoons water
- 1 cup Greek yogurt
- 1/2 teaspoon grated lemon zest, plus more for garnish
- 1 teaspoon honey
- Sprig of mint, for garnish
Directions:
Begin by making the blueberry jam. Place the blueberries in a small sauce pan with the two tablespoons of water. Heat the blueberries over medium-high heat until bubbly. Reduce the heat to medium-low and cook the berries for another 5 minutes, or until the blueberries have all burst open and are soft. Place the blueberry jam in a bowl and let it cool completely in the refrigerator.
Next, make the honeyed Greek yogurt. Add the Grek yogurt to a mixing bowl and add the lemon zest and honey. Mix everything together to combine. Scoop 1/2 cup of the yogurt mixture into a glass or a small bowl and place in the refrigerator with the blueberry jam.
Once the blueberry jam has cooled, scoop 1/4 cup of the jam on top of the yogurt and garnish with lemon zest and a sprig of mint. Serve immediately.
