Pan-Seared Ribeye with Herb & Garlic Butter- A Steakhouse Dinner At Home

Enjoy the romance of Valentine’s Day by cooking a delicious steakhouse dinner at home. While dining out at restaurants is always fun, it is always a bit pricier when this holiday rolls around. Instead, I am making a full steakhouse dinner at home that will easily serve two people for just under $100.

This steakhouse dinner at home menu includes a Radicchio Salad with Balsamic Vinaigrette to start. It is followed by Pan-Seared Ribeye Steak with Herb and Garlic Butter as the main. For sides, I am serving Sour Cream & Onion Twice-Baked Potatoes and Roasted Asparagus with Parmesan Cheese. Finally for dessert, I am making a Strawberry Tiramisu for Two— a mini tiramisu that can be shared between two people.

For me, the star of the meal has to be the Pan-Seared Ribeye with Herb & Garlic Butter. It is savoury, succulent, delicious, and will truly impress whoever you are serving it to. Not only is the ribeye a flavourful cut of meat on its own, the addition of a homemade herb and garlic butter adds another layer of flavour and savouriness, making this an indulgent treat!

How to Pan-Sear Steak at Home

Pan-searing a steak at home is a great way to cook a steak if you do not have an outdoor grill. Or if you do not want to battle the freezing temperatures to cook on one! This method can be used for cooking any cut of steak including a ribeye, New York striploin, t-bone steaks, and even tenderloins. Follow my tips below to achieve a perfect pan-seared steak at home!

Simple Seasoning

If you buy high quality meat like I do, you will know that the meat on it’s own is incredibly flavourful and should not be covered up with competing flavours. I like to keep my steak seasoning really simple by just using salt and lots of freshly ground black pepper. These classic seasonings really go well with steak and popular accompaniments like garlic and thyme.

A Blazing Hot Pan

The second key to cooking a perfect pan-seared steak is to ensure that they pan is very hot. I preheat a dry pan (i.e., with no oil) over medium-high heat for a good 3 to 5 minutes. This ensures that the base of the pan is hot and you can see small whisps of smoke rising from the pan. One the pan is hot like this, I add a small amount of grapeseed oil and twirl the pan to coat the entire base with a thin layer of oil.

Don’t Move the Steak

Once the steak is placed in the hot pan, let it sear, undisturbed, for at least 2 to 3 minutes on each side. This searing process allows the steak to form a crust. Your resistance to poking and proding the steak will be rewarded with a juicy and flavourful steak!

Finish in the Oven

Finishing the steak off in the oven is a great way to ensure the steak is cooked perfectly. If you forgo this step, the edges of the steak may become overcooked and the interior will be raw! I finish the steak in the oven at 350 degrees F for anywhere between 6 to 10 minutes. The time will depend on the thickness of the steak and my desired temperature that I would like it cooked to.

The Cost Breakdown & Suggested Substitutions

I know that grocery prices can vary significantly in different cities and countries. They can also vary depending on what grocery store you shop at. For context, I live in Burnaby, BC, Canada (just outside of Vancouver) and grocery prices are slightly cheaper than more remote areas of Canada. In total, my grocery expenses for this meal came to $98.

Of course, I did not include the cost of everyday items that I have at home. This includes oil, balsamic vinegar, espresso, salt, pepper, etc. or our wine that we enjoyed with our meal. But this cost breakdown shows that you can roughly make an affordable dinner for around $100!

If you are on a tighter budget, there are some ingredients that you could easily substitute. The cut of steak would be my first recommendation as ribeye is fairly expensive compared to a cut like striploin. You can even forgo the meat all together if desired and pan sear some mushrooms for a vegetarian option that will be less expensive, but still delicious.

Dairy is also a heavy hitter for grocery expenses, especially here in Canada. Omitting the Parmigiano Reggiano cheese from the Roasted Asparagus will also cut costs. The asparagus will still be just as delicious when roasted with salt, pepper, and olive oil. Finally, omitting the Boursin cheese from the salad is a great option as this variety of cheese is expensive.

Pan-Seared Ribeye Steak with Herb & Garlic Butter

Ingredients
  

For the Steak:

  • 1 ribeye steak ~700g
  • 1 teaspoon sea salt
  • 2 tablespoons ground black pepper
  • 1 tablespoon olive oil
  • 1 teaspoon grapeseed oil
  • 1 clove garlic halved
  • 2 sprigs fresh thyme

For the Herb & Garlic Butter:

  • 1/3 cup salted butter at room temperature
  • 1 large garlic clove finely chopped
  • ¼ cup fresh Italian parsley finely chopped
  • 1 teaspoon fresh thyme leaves finely chopped
  • 1 teaspoon dried red chili flakes

Instructions
 

  • Remove the steak from the refrigerator and let sit at room temperature for 30 minutes.
  • While the steak is coming up to room temperature, make the herb and garlic butter by combining all the ingredients in a bowl. Transfer the butter to a sheet of plastic wrap, form into a log shape, and roll up. Place in the refrigerator to chill.
  • Preheat the oven to 350 degrees F. Heat a large oven-safe frying pan over medium-high heat for 3 to 5 minutes.
  • While the pan is heating, use a paper towel to dry the steak on all sides. Season all sides of the steak with the salt and pepper. Rub the steak with the olive oil to lightly coat and to ensure the salt and pepper sticks.
  • Place the steak into the hot pan and sear for 2 to 3 minutes per side. Do not move or flip the steak. After 2 to 3 minutes, a brown crust will form. Then flip to cook on the other side. Add the garlic and thyme and baste the steak with the juices in the pan for 2 to 3 more minutes.
  • Remove the steak from the stovetop and transfer to the oven to bake for another 6 to 10 minutes, depending on how well you like you steak cooked. Once cooked to the desired temperature, remove from the oven and transfer to a plate. Slice a round of the herb and garlic butter and place it on top of the steak. Cover with aluminum foil and let rest for 10 minutes.
  • After resting, slice the steak and serve immediately. Enjoy!
