This Pan-Seared Ribeye Steak with Herb & Garlic Butter is a savoury and succulent main course that will truly impress whoever you are serving it to. Not only is the ribeye a flavourful cut of meat on its own, the addition of a homemade herb and garlic butter adds another layer of flavour and savouriness, making this an indulgent treat!
Remove the steak from the refrigerator and let sit at room temperature for 30 minutes.
While the steak is coming up to room temperature, make the herb and garlic butter by combining all the ingredients in a bowl. Transfer the butter to a sheet of plastic wrap, form into a log shape, and roll up. Place in the refrigerator to chill.
Preheat the oven to 350 degrees F. Heat a large oven-safe frying pan over medium-high heat for 3 to 5 minutes.
While the pan is heating, use a paper towel to dry the steak on all sides. Season all sides of the steak with the salt and pepper. Rub the steak with the olive oil to lightly coat and to ensure the salt and pepper sticks.
Place the steak into the hot pan and sear for 2 to 3 minutes per side. Do not move or flip the steak. After 2 to 3 minutes, a brown crust will form. Then flip to cook on the other side. Add the garlic and thyme and baste the steak with the juices in the pan for 2 to 3 more minutes.
Remove the steak from the stovetop and transfer to the oven to bake for another 6 to 10 minutes, depending on how well you like you steak cooked. Once cooked to the desired temperature, remove from the oven and transfer to a plate. Slice a round of the herb and garlic butter and place it on top of the steak. Cover with aluminum foil and let rest for 10 minutes.
After resting, slice the steak and serve immediately. Enjoy!
