During our long Canadian winters when the majority of the country is frozen, it is typical for every fruit in the grocery store to have a passport. Many fruits that are sold in BC and throughout Canada this time of year are imported from warmer climates- particularly from California and Mexico. While these fruits aren’t local, we still need to eat fruit to get our vitamins and to stay healthy. This Winter Fruit Salad combines all the most flavourful fruits of the season together in salad form with classic winter flavours. Serve the salad all by itself or top with yogurt for an extra healthy kick this winter!

Ingredients:

  • 1 Fuji apple
  • 1 Bartlett pear
  • 3 kiwis
  • 3 clementines
  • 1/2 cup pomegranate seeds
  • 1 Navel orange
  • Zest from the orange
  • 1 tablespoon sugar
  • 1/8 teaspoon cinnamon

Directions:

Begin by chopping the apple, pear and kiwi into bite-sized pieces. Add them to a large mixing bowl. Peel the clementines, pull apart segments and add to the bowl. Add the pomegranate seeds.

Zest the orange entirely, avoiding the white pith, and add to the bowl. Peel the orange by cutting off the top and bottom, then slicing down the sides to remove all of the white pith. Using a pearing knife, slice between each of the orange sections to remove the flesh. Do this over the bowl so that all the orange juice falls in the bowl. Once completely segmented, squeeze the core of the orange over the bowl to extract all the juice.

Add the sugar and cinnamon and mix all ingredients to combine. Let chill in the refrigerator until cool, or consume at room temperature.

You can keep the fruit salad in an air-tight container for up to three days.
