Grilled Vegetables

You may think of firing up the grill for grilling up some ribs, hamburgers, or chicken this summer, but while you’re at it, why not make a side of these healthy Grilled Vegetables?! These RAINBOW grilled veggies are just perfect for Pride weekend here in Vancouver!

I love the flavour that the grill gives to the vegetables- that smoky, charred taste is irresistible. And the way the veggies get all soft and juicy…ugh don’t get me started! In order to get perfectly grilled vegetables, there are a few tips that you should know when handling the grill.

Tip 1 is to cook the vegetables on high heat. This sears the outside of the vegetables and gives an nice char. Tip 2 goes hand-in-hand with the former, do not move the vegetables around too much when you are grilling them. Once you place the vegetable on the grill, don’t touch it. Let it sit, sear and char up- that’s also how you get those prominent char marks! Vegetables such as bell peppers and mushrooms take 2-3 minutes per side, whereas vegetables such as eggplant, zucchini and onions take 4-5 minutes per side.

Tip 3 is to grill the vegetables in a single layer and that they are spaced out enough that they don’t touch. This allows the vegetables to really grill, and not steam. Steam will only soften the vegetables, not give those char marks! Also, make sure to slice up the vegetables so that they are all the same thickness (Tip 4)- this ensures that they all take the same time to cook through.

Last but not least, Tip 5 is to add some flavour! I always grill my vegetables with lots of olive oil, salt and pepper and it brings out the natural flavours of the vegetables, but you can add spices, dried herbs, and even brush the vegetables with miso paste for some bold flavour. No matter what you choose, always remember to season the vegetables before going on grill so that they can absorb the flavours and this will also prevent them from sticking and drying out.

You can serve these grilled vegetables hot off the grill, at room temperature, or even cold. No matter what way you serve them up, they will be absolutely delicious!
