Combining the Best Winter Produce in the Perfect Salad
Winter brings a whole new selection of produce to the grocery stores. While it may not be as abundant as summer or fall produce, there are a few key ingredients that I love to enjoy this time of year. Coincidentally, they are all included in this Kale and Radicchio Salad with Pomegranate Dressing!
Radicchio and kale are my two favourite winter salad greens. Kale is so hearty and becomes soft and delicious with a quick massage of olive oil and sea salt. Radicchio, another star of this salad, shines during the colder months. This vibrant purple leafy vegetable is a type of chicory and is known for its pleasantly bitter taste, which pairs perfectly with sweet and tangy ingredients.
Oranges are another fabulous winter ingredient included in this salad. While they are not grown locally here in Canada, they are in season in other parts of the world such as Australia, South Africa, southern Europe, and the southern United States. Even though they are imported, winter is the best time to enjoy them as they are at their peak flavour. The same thing goes for pomegranates too!
Making Pomegranate Molasses from Scratch
Pomegranate molasses is a key ingredient in the dressing, and gives it a sweet tangy flavour. You can find it pre-made in specialty grocery stores, but since it may not be readily available where you are, I decided to attempt to make it from scratch. The process is incredibly simple and only needs two ingredients: pomegranate juice and white sugar.
All you have to do is boil the pomegranate juice and sugar together until it forms a syrup. Be sure to stir these ingredients together ocasionally as they cook to avoid any burning. Once the syrup has formed, let it cool and then you are ready to make the salad dressing! I told you this was simple!

Kale and Radicchio Salad with Pomegranate Dressing
Ingredients
For the Pomegranate Molasses:
- 4 cups pomegranate juice
- 1/4 cup white sugar
For the Salad:
- 4 cups kale stems removed and leaves chopped into 1-cm slices
- 1/4 teaspoon sea salt
- 2 teaspoons olive oil extra virgin
- 4 cups radicchio core removed and leaves chopped into 1-cm slices
- 2 oranges segmented (supremes)
- ½ cup pomegranate seeds
- ¼ cup toasted pistachios roughly chopped
For the Pomegranate Dressing:
- ¼ cup homemade pomegranate molasses
- 1 tablespoon honey
- 1 tablespoon red wine vinegar
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
To Make the Pomegranate Molasses:
- In a small sauce pot, combine the pomegranate juice and sugar.
- Bring to a boil over high heat, stirring to dissolve the sugar.
- Reduce the heat to medium-high and let it simmer gently until the mixture reduces to about 1/4 cup and reaches a syrupy consistency. This usually takes about 20 minutes. Stir every few minutes, especially near the end of the cooking process, to ensure the syrup does not burn.
- Allow the molasses to cool completely before making the dressing. It can be stored in a clean jar in the refrigerator for up to a month.
To Make the Salad and Dressing:
- In a large bowl, massage the kale with a pinch of salt and olive oil until it softens. Add the radicchio and toss to combine.
- Arrange the orange supremes, pomegranate seeds, and toasted pistachios on top of the greens.
- To make the dressing, whisk together the pomegranate molasses, honey, red wine vinegar, and olive oil in a small bowl. Season with salt and pepper to taste.
- Drizzle the dressing over the salad just before serving. Toss gently to coat and enjoy!
