It’s Sunday morning and you know what the means: Sunday brunch! Rather than putting in effort to getting up early and making your way to a bustling brunch spot, why not sleep in and make brunch at home? This pancake recipe is very simple to make and can be topped with any ingredients you like! So skip the lines at the cafes and relax at home… brunch tastes way better in your PJ’s anyways.


Oh So Fluffy Pancakes

Servings: 4 pancakes

Difficulty: Easy

Ingredients:

1 cup all purpose flour
2 teaspoons baking powder
2 teaspoons sugar
1/2 teaspoon salt
3/4 cup milk
1 egg
1 teaspoon vanilla extract
Oil for frying
5-6 strawberries
Maple syrup
Butter

Directions:

Sift the flour, baking powder, sugar and salt into a large mixing bowl. In a separate bowl, combine the milk, egg, and vanilla. Mix well.

Add the milk mixture to the flour mixture and whisk well until most lumps are gone. Do not over-mix as the pancakes will be tough.

Over medium heat, scoop 1/2 cup of the pancake batter into the pan and fry the pancakes in about 2 tsp of oil. When bubbles rise through the center of the pancake, flip onto the other side. In total, the pancake should take 4 minutes to cook through. Repeat the process for the remaining pancake batter.

Place the pancakes on a plate and top with butter, sliced strawberries and maple syrup.

Serve and enjoy!
