Choco-Coconut Power Balls


These Choco-Coconut Power Balls are a tasty, healthy, and filling snack to have on hand when you need a little bit of extra energy. These are packed with sweet dates, creamy nut butter, crunchy oats, tender coconut, and rich cocoa powder. When all these delicious ingredients are combined, they give you that extra boost of energy and really fill you up! Oh ya, and did I mention? They are raw and vegan. I mean, does it really get any better?

Ingredients:

  • 1 1/2 cups Noor Dates, roughly chopped
  • 1 tablespoon water
  • 1/4 cup nut butter
  • 1 cup unsweetened coconut, shredded, plus 1/3 cup for rolling
  • 1 tablespoon cocoa powder
  • 1 tablespoon coconut oil, melted
  • 1/2 cup rolled oats
  • 1 teaspoon salt

Directions:

Add the chopped dates, water and nut butter to a food processor. Pulse until the dates are chopped to the size of peas and the nut butter is fully incorporated.

Add the date mixture to a large bowl. Next, add 1 cup of coconut, cocoa powder, coconut oil, oats and salt to the bowl. Combine the mixture with a spoon. Add the remaining 1/4 cup of coconut to a plate and set aside.

Scoop one heaping tablespoon of the mixture into your hand and roll the mixture into a ball. The balls should be about the size of a golf ball. Next, roll the ball into the remaining 1/4 cup of coconut and cover all sides with the coconut. Place the ball on a plate and continue the process for the rest of the balls.

Chill the balls for 30 minutes in the fridge before eating. You can store the power balls in a air-tight container in the fridge for 4-5 days…but it is highly unlikely that they will last that long!
