An Easy Single Serving Recipe
While a lot of my recipes are developed to serve multiple people, sometimes it’s nice to develop recipes for one person. Whether you are living on your own, or your family is away, this Curry Udon Noodle Soup is the perfect recipe for one!
I made this recipe really simple using everyday ingredients like scallions, carrots, frozen udon noodles, curry cubes, and a bit of ground beef. You will likely have the majority of the ingredients in your fridge and can easily whip up this Curry Udon Noodle Soup recipe with ease.

A Bit about Japanese Curry Cubes
Curry cubes are a saviour for weekday meals. They come in varying heat levels, but I like the “Hot” flavour from the Glico brand the best. It is not that spicy, but adds great flavour and depth to recipes like this Curry Udon Noodle Soup.
These curry cubes are made with lots of curry, spices, and a few fun ingredients like banana powder and raisins. You definitely cannot taste these in the recipe, but they add great sweetness to compliment the curry. These curry cubes also contain wheat flour and oil to allow them to thicken up any soup or stew.
These curry cubes come in a plastic tray where you can easily break off the curry cubes and add it to your recipe. For storage, I prefer to store open packages of the curry cubes in a plastic bag in the refrigerator to prevent spoiling. Unopened packages can be kept at room temperature.

Curry Udon Noodle Soup
Ingredients
- 100 grams lean ground beef
- 1 teaspoon soy sauce
- 1 teaspoons oyster sauce
- ½ teaspoon ground black pepper
- 2 teaspoons grapeseed oil
- 3 scallions whites and greens divided, finely chopped
- 1 medium carrots diced
- 1 Glico curry cube
- 1 ¼ cup water
- Water for boiling
- 1 package frozen udon noodles
- 1 egg hardboiled
Instructions
- Heat a small frying pan over medium-high heat. Once hot, add the ground beef and use a spoon to break into small crumbles. Cook until there is no more pink, then add the soy sauce, oyster sauce, and black pepper to the pan. Mix to combine and set aside over low heat to keep warm.
- Add the grapeseed oil to a small pot and heat over medium-high heat. Once hot, add the white and light green ends of the scallions and the carrots to the pot. Sauté for 3 to 4 minutes until the vegetables have softened slightly. Add the curry cube and water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 5 minutes.
- Bring a small pot of water to a boil. Add the frozen udon noodles and cook for 3 to 4 minutes, until the noodles have separated and are soft. Drain and place in a bowl.
- Top the cooked udon noodles with the soup, and garnish with the ground beef, the green ends of the scallions, and the egg. Serve immediately and enjoy.
