3scallionswhites and greens divided, finely chopped

1Glico curry cube
1 ¼cupwater

1package frozen udon noodles
1egghardboiled
Instructions
Heat a small frying pan over medium-high heat. Once hot, add the ground beef and use a spoon to break into small crumbles. Cook until there is no more pink, then add the soy sauce, oyster sauce, and black pepper to the pan. Mix to combine and set aside over low heat to keep warm.
Add the grapeseed oil to a small pot and heat over medium-high heat. Once hot, add the white and light green ends of the scallions and the carrots to the pot. Sauté for 3 to 4 minutes until the vegetables have softened slightly. Add the curry cube and water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 5 minutes.
Bring a small pot of water to a boil. Add the frozen udon noodles and cook for 3 to 4 minutes, until the noodles have separated and are soft. Drain and place in a bowl.
Top the cooked udon noodles with the soup, and garnish with the ground beef, the green ends of the scallions, and the egg. Serve immediately and enjoy.
