We are on to our third day of my #12DaysOfChristmas series here on my blog, and I am getting into my holiday baking! Yesterday’s post all about pairing Hot Chocolate with Cookies, really got me thinking about what cookies to make this year. So I’ve rounded up my top cookie recipes to share with you! I hope that this inspires you to get to baking (if you haven’t already!) and to try out some of my own recipes!

Shortbread Cookies
If I only had to choose one cookie recipe to make this year, it would have to be these Shortbread Cookies. This recipe is actually a family recipe that has been passed down from my great-grandma! As with any traditional shortbread cookie, this recipe uses A LOT of butter with just three other standard baking ingredients that you likely have in your pantry already! I love the flavour of these cookies, the crunch from the sprinkles, and the fact that they can freeze wonderfully (which makes it handy if you have any unexpected guests pop by!). Plus, they pair perfectly with a nice cup of tea! You definitely have to give these Shortbread Cookies a try this year– my great-grandma will be happy that you did!

Chocolate Rudolph Cookies
If you’re looking for a chocolate-based cookie for the holidays, then this recipe for my Chocolate Rudolph Cookies is right for you! The cookie base is dense and rich just like a brownie, and they are each adorned with a glossy maraschino cherry! The combination of the chewy chocolate cookie and sweet cherry makes these cookies a bit unexpected, but always delicious!

Cinnamon Roll Cookies
Every Christmas, we start our day off with some warm cinnamon rolls in the morning before we get into opening our gifts. We don’t eat cinnamon rolls any other time of the year, but I love the cinnamon flavour so much that I decided to transform cinnamon buns into these Cinnamon Roll Cookies! These two-bite cookies have a traditional cinnamon roll swirl that filled with sugar and TONS of cinnamon. Plus, they look so beautiful! Try these cookies out this holiday season, or any other time of year when you’re craving cinnamon rolls!

Gluten-Free Almond Thumbprint Cookies
It’s always a good idea to have a gluten-free cookie recipe up your sleeve for anyone who may have a gluten allergy, and these Gluten-Free Almond Thumbprint Cookies are always a hit! The almond flavour is really pronounced in these cookies from the almond flour base, almond extract, and whole almonds to garnish the cookie. This cookie also holds its shape really well for a gluten-free cookie and is even strong enough to be (quickly) dunked into a glass of almond milk! Almond level is over 5000!

Gingerbread Cookies
If there is one cookie that symbolizes the season, it has to be Gingerbread Cookies. My recipe uses cinnamon and ginger for a lighter-flavoured gingerbread cookie that still tastes festive! You can choose to decorate it with icing sugar if you wish, or you can eat these plain- they’re excellent both ways! Even though I may not make Gingerbread Cookies, I will be making a gingerbread house using this recipe! Look out for that post coming in before Christmas!
