Mini desserts are a great option for when you want a sweet treat but don’t want to eat a lot of it! This Mini Strawberry Tiramisu for Two is layered with lady fingers soaked in espresso, a light mascarpone whipped cream, and fresh strawberries. This no-bake dessert that can be perfectly shared between two people!

A Sweet No-Bake Dessert

Tiramisu is once of the easiest desserts to assemble and it requires no baking at all! Store-bought ladyfingers (also knows as savoiardi cookies) form the base of this recipe. These light and incredibly crisp cookies are briefly dipped into espresso and arranged in layers in the serving dish.

The ladyfingers are topped with a rich whipped cream and marscapone cheese mixture. The marscapone cheese adds lots of richness and a slight tanginess to this dessert recipe. In my opinion, there are no substitutes for marscapone cheese in a tiramisu recipe, however cream cheese may be used (if you are desperate!) or you can simply use whipped cream.

Strawberries are not typically used in a traditional tiramisu. However, I thought that this addition was great to add some freshness to this otherwise heavy and rich recipe. Strawberries are also so romantic, especially when serving this recipe for Valentine’s Day!

Mini Strawberry Tiramisu for Two

Ingredients
  

  • 2/3 cup whipping cream
  • ½ cup mascarpone cheese at room temperature
  • 2 tablespoons granulated white sugar
  • 8 lady fingers
  • 1/3 cup espresso or strongly brewed coffee
  • 4 large strawberries diced
  • 2 large strawberries halved, for garnish

Instructions
 

  • In a medium-sized bowl, whip the whipping cream until soft peaks form. Add the mascarpone cheese and sugar to the whipped cream and whisk through until smooth. Set aside for now.
  • Pour the espresso (or strongly brewed coffee) into a shallow baking dish. Dip the ladyfingers into the espresso, one at a time, and place into the bottom of a serving bowl so that they are touching and are in a row. Do not soak the ladyfingers for a long time in the espresso as they will become too soggy. Continue this process of dipping the ladyfingers into the espresso and lining them up directly next to each other in the bowl until you have a base of four soaked ladyfingers in the bottom of the bowl.
  • Top the ladyfingers with half of the whipped cream mixture and spread out into an even layer. Add the diced strawberries on top and spread them out into an even layer.
  • Add a few dollops of whipped cream mixture on top of the strawberries. Dip another four ladyfingers into the espresso and place on top of the strawberries and cream. Top the second layer of ladyfingers with the remaining whipped cream mixture and spread out into a smooth layer.
  • Top the tiramisu with the halved strawberries as a garnish. Cover with plastic wrap and place in the fridge to set for at least 4 hours or overnight.
  • Once ready to serve, remove from the refrigerator and serve with two spoons. Enjoy!
