Broiled Grapefruit with Ginger & Honey

I had this breakfast for the first time at a cute little B&B and I have been making it ever since. I immediately fell in love with this combination of sweet, sour and spicy flavours and the overall lightness and freshness of this broiled fruit. Serve with yogurt and granola and you will be ready to take on the day!

Ingredients
  

  • 1 grapefruit I used Ruby Red
  • 2 tablespoons fresh ginger grated
  • 2 tablespoons honey

Instructions
 

  • Set the oven to broil and place your oven rack near the top of the oven.
  • Slice the grapefruit across the middle so that the segments are exposed. Proceed to segment the fruit by cutting between the membranes and along the rind, as you would normally eat a grapefruit. Do not scoop out the segments yet.
  • Sprinkle the grated ginger on top (cut side up) of the segmented grapefruit and then cover the ginger with a layer of honey. I find that a 1 tablespoon amount on each half of the grapefruit is perfect.
  • Place the grapefruit in an oven proof dish, cut side up, and broil for 5-7 minutes or until the honey is bubbling and the grapefruit is warm.
  • Serve warm either alone or with yogurt and granola. Enjoy!
