Ingredients
For the Salad:
- 1 head radicchio core removed, cut into 1-inch pieces
- 3 cups green leaf lettuce cut into 1-inch pieces
- ¼ cup Boursin Herb and Garlic cheese crumbled
- 2 tablespoons sliced almonds toasted
- 1 tablespoons pistachios toasted
For the Balsamic Vinaigrette:
- ¼ cup extra virgin olive oil
- ¼ cup sweet balsamic vinegar
- ¼ teaspoon sea salt
- ¼ teaspoon ground black pepper
Instructions
- In a small bowl, whisk all the Balsamic Vinaigrette ingredients until combined.
- Thoroughly wash the radicchio and green leaf lettuce and add to a large salad bowl. Pour the balsamic vinaigrette over the lettuce and toss to coat.
- Top the salad with the crumbled Boursin cheese, sliced almonds, and pistachios. Serve immediately and enjoy!
