Radicchio Salad with Balsamic Vinaigrette

Winter salads can be a bit boring and bland, but not this recipe for Radicchio Salad with Balsamic Vinaigrette. Bitter radicchio is tossed with green leaf lettuce and a homemade balsamic vinaigrette and topped with Boursin cheese and sliced almonds and pistachios.

For the Salad: 1 head radicchio core removed, cut into 1-inch pieces 3 cups green leaf lettuce cut into 1-inch pieces ¼ cup Boursin Herb and Garlic cheese crumbled 2 tablespoons sliced almonds toasted 1 tablespoons pistachios toasted For the Balsamic Vinaigrette: ¼ cup extra virgin olive oil ¼ cup sweet balsamic vinegar ¼ teaspoon sea salt ¼ teaspoon ground black pepper
In a small bowl, whisk all the Balsamic Vinaigrette ingredients until combined.
Thoroughly wash the radicchio and green leaf lettuce and add to a large salad bowl. Pour the balsamic vinaigrette over the lettuce and toss to coat.
Top the salad with the crumbled Boursin cheese, sliced almonds, and pistachios. Serve immediately and enjoy!
