Radicchio Salad with Balsamic Vinaigrette

Winter salads can be a bit boring and bland, but not this recipe for Radicchio Salad with Balsamic Vinaigrette. Bitter radicchio is tossed with green leaf lettuce and a homemade balsamic vinaigrette and topped with Boursin cheese and sliced almonds and pistachios.

Ingredients
  

For the Salad:

  • 1 head radicchio core removed, cut into 1-inch pieces
  • 3 cups green leaf lettuce cut into 1-inch pieces
  • ¼ cup Boursin Herb and Garlic cheese crumbled
  • 2 tablespoons sliced almonds toasted
  • 1 tablespoons pistachios toasted

For the Balsamic Vinaigrette:

  • ¼ cup extra virgin olive oil
  • ¼ cup sweet balsamic vinegar
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • In a small bowl, whisk all the Balsamic Vinaigrette ingredients until combined.
  • Thoroughly wash the radicchio and green leaf lettuce and add to a large salad bowl. Pour the balsamic vinaigrette over the lettuce and toss to coat.
  • Top the salad with the crumbled Boursin cheese, sliced almonds, and pistachios. Serve immediately and enjoy!
