Ingredients
  

  • 1 fillet halibut halved, skin and bones removed
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic finely chopped
  • 2 medium tomatoes diced
  • 1 cup pitted Castelvetrano olives halved
  • ¼ teaspoon dried oregano
  • ¼ teaspoon chili flakes optional
  • ¼ cup Italian parsley finely chopped
  • 3 to 4 basil leaves finely chopped

Instructions
 

  • Season the halibut fillets with salt and pepper on both sides.
  • Heat a large frying pan over medium-high heat. Once hot, add the olive oil followed by the fish. Sear on the first side for 2 to 3 minutes. Flip the fillets then add the garlic and tomatoes and olives to the pan.
  • Simmer for 3 to 4 minutes, then add the dried oregano and chili flakes. Cover and steam for 4 to 5 minutes to fully cook the fish and to let the tomatoes soften. The total cooking time will depend on the size of the halibut fillets, but they will be done when they are opaque white and flake apart.
  • Place on a serving plate and sprinkle with the fresh parsley and basil. Drizzle with extra olive oil, if desired. Serve immediately and enjoy!
