Grilled Grape Crostini with Goat Cheese, Honey & Thyme

My Grilled Grape Crostini with Goat Cheese, Honey & Thyme is the perfect late summer treat. Fresh grapes are grilled on the BBQ until soft and are served on crispy baguette. The addition of soft goat cheese, honey and thyme really bring all these flavours together!

Ingredients
  

For the Grapes:

  • 1 bunch seedless red grapes on the vine (~1 pound)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

For the Crostini:

  • 1/2 baguette sliced into 1-cm thick slices (12 slices)
  • ¼ cup olive oil
  • ½ teaspoon salt
  • 3/4 cup soft goat cheese
  • 2 tablespoons honey
  • 1 tablespoon fresh thyme leaves

Instructions
 

  • Preheat the grill to 350 degrees F.
  • Toss the grapes in the olive oil, salt and black pepper so that they are fully coated.
  • Slice the baguette and brush both sides of each crostini with olive oil and sprinkle evenly with salt.
  • Place the grapes and the crostini on the grill. Cook the grapes for 3-4 minutes per side, or until the grapes have softened, lightened in colour, and get light grill marks. Cook the crostini for 1-2 minutes per side until it is lightly toasted and is golden brown.
  • Remove the grapes and crostini from the grill and set aside.
  • To assemble the crostini, spread 1 tablespoon of goat cheese over a slice of toasted crostini. Remove the grapes from the stems and add 4-6 grapes on top of the goat cheese (depending on the size of the grapes). Repeat for all the crostini.
  • Drizzle ½ teaspoon of honey over each crostini and top with a sprinkle of thyme leaves.
  • Serve warm with a glass of Singletree Siggy Siegerrebe and enjoy!

Notes

  • You can roast the grapes and toast the crostini in the oven instead. Preheat the oven to 400 degrees F. Roast the grapes on a baking sheet for 20-30 minutes, flipping halfway through cooking. Toast the crostini for 2-3 minutes per side until golden brown and crisp. Then assemble following the instructions above. Enjoy!
