French Onion Dip


This recipe for French Onion Dip tastes as good as the soup packet- but is much better for you. I use a mixture of red and yellow onions for my recipe since the red onions provide lots of sweetness and the yellow onions provide a solid onion flavour. Seasoned with light and refreshing lemon juice, thyme and a splash of red wine vinegar, and a major hit of roasted garlic, this onion dip gets elevated to a whole new level. Once you try this, you will never be able to go back to the packaged stuff!

Ingredients:

  • 2 tablespoons olive oil
  • 3/4 cup yellow onion, finely chopped
  • 1/2 cup red onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon fresh thyme
  • 1 teaspoon red wine vinegar
  • 2 tablespoons lemon juice
  • 1/2 head roasted garlic (approx. 1 heaping tablespoon)
  • 1 cup Greek yogurt
  • 1 cup sour cream

Directions:

Heat the olive oil in a pan over medium-high heat. Add the red and yellow onions and fry for 2 minutes. Reduce the heat to low, add the garlic, salt and pepper and cook the onions and garlic for 30 minutes, stirring periodically, until the onions are caramelized. The onions should be a medium brown colour and soft, not crisp. Add the fresh thyme and vinegar to the hot onions and stir. Turn off the heat and let the onions cool to room temperature before mixing with the yogurt and sour cream.

Once the onions have cooled, place them in a medium-sized mixing bowl. Add the lemon juice, roasted garlic, Greek yogurt and sour cream.  Mix the ingredients together to combine. Taste the mixture and add additional salt and pepper as needed.

You can serve this dip immediately, or prepare it the day before and serve it from the fridge. It definitely does taste better once the flavours have had a chance to combine together, so I recommend preparing this the day before. Serve with classic ruffled potato chips or healthy beet/ vegetable chips as desired!
