Ingredients:
- 1 cup Castelvetrano olives
- 6 slices orange rind
- 1 tablespoon fresh rosemary leaves, whole
- 1 tablespoon dried oregano leaves
- 1 clove garlic, sliced
- 1 teaspoon red chili flakes
- 4-6 dried chilis, whole
- 1/2 teaspoon black pepper
- 1 – 1 1/2 cups extra virgin olive oil (or enough to cover the olives)
Directions:
In a large bowl, combine all the ingredients and toss to fully coat. Fill a jar/container with the olives and then top off with olive oil, making sure that the olives are fully submerged in the oil. Place in the refrigerator to marinate for at least 24 hours, or up to 2 weeks. The longer the olives sit in the marinade, the more flavourful they will be!
