Blue Cheese Stuffed Dates


This recipe is a classic play on Devils on Horseback but made vegetarian. While I may have ditched the bacon and prune, I kept the delicious taste! Plump dates are filled with creamy blue cheese and are topped with a roasted walnut. This is a perfect retro dish that is great for any occasion!

Ingredients:

  • 12 dates
  • 1/2 cup hot water
  • 1/3 to 1/2 cup blue cheese (I use Gorgonzola) at room temperature
  • 12 walnuts, roasted

Directions:

Place the dates in a bowl and cover them with hot water. Let the dates soak in the hot water for 5 minutes to plump up.

Once plumped up, drain the dates and discard the water. Use a paper towel to throughly dry the dates off.

Use a sharp paring knife to make a slit lengthwise into the side of the date and open it up. You may also be able to find the slit where the pit of the date was removed too which also works.

Take 1/2 a teaspoon of the blue cheese and stuff it into the centre of the date and fold the date back up into its round shape. Top with a roasted walnut and repeat for all the remaining dates.

Serve cold or at room temperature. Enjoy!
