Served at high tea, these Classic Tea Sandwiches are sure to thrill your guests. I mean, who doesn’t love mini sandwiches with the crusts cut off? I have included two classic tea sandwich recipes: Cucumber and Egg & Sprouts. The classics are always the best!

Ingredients:
Egg & Sprout Tea Sandwich
- 6 slices fresh white bread
- 4 tablespoons butter
- 4 hard boiled eggs
- 2 tablespoons mayonnaise
- 1 teaspoon ground black pepper
- 3 cups fresh sprouts
Cucumber Tea Sandwich
- 6 slices fresh brown bread
- 4 tablespoons butter
- 1 cup cucumber, thinly sliced
- 4 radishes, thinly sliced
- 1/2 cup cream cheese
- 2 tablespoons greek yogurt
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon ground black pepper
Directions:
For the Egg & Sprout Tea Sandwich:
Finely chop the hard boiled eggs and place into a small mixing bowl. Add the mayonnaise and pepper and mix to combine. Set aside while you prepare the bread.
Butter once side of each piece of bread, making sure to spread the butter all the way to the edges. Evenly divide the egg mixture among three slices of bread. Top with a cup of sprouts per slice and add the other bread slice to the top.
Wrap in plastic wrap and place in the freezer for 20 minutes (this makes the sandwiches easier to cut). Slice off the crusts (if desired) and serve cold.
For the Cucumber Tea Sandwich:
Add the cream cheese, yougurt, lemon juice, dill and pepper to a small mixing bowl and mix until the whole mixture is smooth. Set aside.
Butter once side of each piece of bread, making sure to spread the butter all the way to the edges. Spread the cream cheese mixture on each slice of bread. Top with the sliced cucumbers and radishes. Add the top of the sandwich on top and gently press down.
Wrap in plastic wrap and place in the freezer for 20 minutes (this makes the sandwiches easier to cut). Slice off the crusts (if desired) and serve cold.
