Lemon Sugar


This simple, two-ingredient recipe is the perfect way to make use of an entire lemon. The zest of the lemon contains oils that are fragrant and just as flavourful as lemon juice. Combine the zest with sugar and voila- you have lemon flavoured sugar. Use it to sweeten teas or add into dessert recipes for an extra lemony kick. This also makes a great hostess gift and can be modified with whatever citrus you want!

Ingredients:

  • Zest of 1 lemon (preferable organic), approximately 1 tablespoon
  • 1 cup granulated sugar

Directions:
Using a microplane, zest the lemon. Only zest the yellow skin of the lemon, making sure not to go too deep or into the white pith as it is very bitter.

Add the lemon zest into a food processor along with 1/2 cup of sugar. Pulse the mixture until the lemon zest is finely ground, approximately 2 minutes. Add the remaining cup of sugar and pulse for another minute to combine.

Spread the lemon sugar in an even layer on a piece of parchment paper. Let it sit at room temperature for 1 hour to allow the moisture to evaporate. After 1 hour, crumble the large chucks of sugar using your hands until it is smooth. Spread it out on the parchment paper and let it sit at room temperature for another hour.

Transfer the sugar to an air-tight container. You can store this for months on end in a cool, dry place or give it away as a hostess gift!
