This recipe uses all the basic ingredients of a Mojito (rum, lime, sugar, mint, sparkling water) but the preparation method is slightly different. Rather than muddling the lime and sugar and mint, just throw everything (except the sparkling water) into a cocktail shaker with some ice and give it a good, vigorous shake for 30 seconds. Once everything is mixed up, pour it into a glass and top with sparkling water! I also decided to add some fresh BC blueberries to my Lazy Mojito because they are so sweet and totally in season right now. Topped of with a sprig of mint and a wedge of lime and you have yourself a summer cocktail ready in under one minute!

- 1 oz. rum (preferably white rum)
- 1 teaspoon white sugar
- 2 lime wedges (plus more for garnish)
- 5 large mint leaves, roughly torn (plus more for garnish)
- Small handfull blueberries, approximately 10 (plus more for garnish, optional)
- 2-3 ice cubes
- Sparkling water
Squeeze the juice from the lime wedges into a cocktail shaker or mason jar then throw in the lime wedges. Add the rum, sugar, mint leaves, blueberries, and ice. Cover the shaker/mason jar and shake vigorously for 30 seconds. The ice will bruise the mint leaves, limes and blueberries and release all the flavour.
Once shaken, pour the contents into a glass over more ice, then top off with sparking water and your garnishes.
