The traditional gin sour (made with simple syrup, gin and lemon juice) gets a seasonal twist with sage leaves and honey. Topped off with a bit of sparking water for effervescence and you have a fabulous cocktail to enjoy with friends and family this season.

- 1 oz. freshly squeezed lemon juice
- 1 oz. sage syrup (recipe below)
- 1 oz. gin
- Ice cubes
- San Pellegrino (or other sparking water)
- Sprig of sage, for garnish
- Sliced lemon, for garnish
Sage Syrup (enough for 4 drinks):
- 1 1/2 cup water
- 2/3 cup honey
- 6 sprigs sage
Directions:
Begin by preparing the sage syrup. In a small pot, add the water and honey and cook over medium-high heat until warmed through (do not boil), approximately 5-6 minutes. Remove from heat and add the sage leaves. Let the leaves steep in the syrup for 10-15 minutes then remove the sage leaves.
In a cocktail shaker, add ice, lemon juice, syrup, and gin. Shake for 60 seconds, or until cold. Strain into a glass. Top with sparking water and a sprig of sage and sliced lemon for garnish. Cheers!
