Pumpkin Spice Energy Balls


Energy bites are a great snack year-round as they provide you with a boost of energy to get you through your day. However, autumn-inspired energy bites are my favourite. Why? Because of PUMPKIN SPICE! I use pureed pumpkin in my quick and easy recipe along with dates, oats and almonds for a healthy boost.

Prep Time:  15 minutes   |   Cook Time: 0 minutes   |   Total Time: 45 minutes

Ingredients:

  • 1 cup Medjool dates, pitted
  • 1 cup hot water
  • 1 cup almonds
  • 1/2 cup oatmeal
  • 1/3 cup pumpkin puree
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt

Directions:

Place the dates into a small bowl and cover with water. Let the dates soak for 10 minutes, then drain. Discard the liquid- we will not use it in the recipe.

Place the dates and almonds into a food processor and pulse until finely ground. The mixture should look like this:

Place the date mixture into a large mixing bowl. Add the rest of the ingredients to the bowl and mix using a spatula until thoroughly combined. Adjust the spices to taste. Place the entire bowl into the refrigerator for 30 minutes to chill.

Use your hands to form the dough into small balls, roughly the size of a golf ball. Place the formed balls on a plate and cover with plastic wrap. You can store these for 5-6 days in the refrigerator…but trust me, they won’t last that long!
