This recipe can be made in a flash with ingredients that you are likely to already have in your pantry. On my autumn-inspired chocolate bark recipe, I use white chocolate, tart cranberries, sweet apricots and crunchy walnuts and pumpkin seeds for texture. Whip up this recipe when you have last minute guests and you will really impress them!

Ingredients:
- 1 1/2 cups white chocolate chips
- 1/3 cup dried cranberries
- 1/3 cup dried apricots, sliced
- 1/4 cups chopped walnuts
- 1/8 cup pumpkin seeds
Directions:
Place the chocolate chips in a microwave-safe bowl. Microwave the chocolate chips in high in 30 second intervals until fully melted. This normally takes about 1 1/2 minutes or so.
Spread the melted chocolate evenly on a tray lined with parchment paper. Smooth out the chocolate with a rubber spatula to a thickness of approximately 1/2 centimetre.
While the chocolate is still wet, sprinkle the cranberries, sliced apricots and nuts evenly across the chocolate. Gently press the toppings into the chocolate once everything is sprinkled on top.
Place the whole tray into the fridge for 30 minutes, or until fully solidified. Once solid, break the chocolate apart into medium sized pieces using your hands. Store the chocolate bark in an air tight container in the fridge.
