Curried Butternut Squash Soup

 

As the autumn days get cooler and rainier, I am in constant search for something to keep me warm. Whether it is a cup of peppermint tea (my current obsession) or a cozy blanket, nothing beats a nice warm cup of soup.

Soup has to be one of my most favourite meals. I could probably eat it every day and never get sick of it since there are so many soup variations out there. On the lighter and healthier side we have classics like tomato and basil soup, chicken noodle soup, lentil soup, bone broth soup, minestrone soup- they’re all amazing. And on the more decadent side we have cream of mushroom soup, broccoli cheddar soup, French onion soup, beef stew with dumplings, ramen- the list goes on….and I love them all! Hmm..now that I’m thinking of all these soups, I need to post more on the blog! So you should look forward to a soup series coming next month 😛

Anyways, for the fall we have to make some sort of squash soup. With various varieties of squash in peak season right now to choose from, the sweet butternut squash is always a great choice (and is my top three favourite squashes). I mean, let’s face it, you can’t get through fall without having butternut squash in one form or another (or anything pumpkin spice for that matter!). Butternut squash is particularly good for soups, as its texture allows it to be pureed into a smooth and velvety texture. While I still love my classic butternut squash soup recipe made with onions, apples, and a touch of cinnamon- I decided to add a little twist to it a while ago, and I’ve had to make it the same way ever since.

In my updated version, I add a touch of curry powder and turmeric to add a delectably spicy and warming flavour. To go along with those South-Asian/Indian flavours, I also added a drizzle of coconut milk and cilantro for a cooking effect. I also garnished the soup with pepitas (pumpkin seeds) for a delightful crunch against that silky smooth soup. Mmm…it’s literally a bowl of heaven!
